Ingredients:
- 2 large red onions (approx. 1 lb / 450g)
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
Instructions:
- Peel the outer papery skin from the onions. Slice the onions into thick rounds, approximately 3/4 inch (2cm) thick. Gently press down on the rounds to separate the layers slightly without completely breaking them apart.
- In a large bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, and garlic powder. Toss the onion rounds in the mixture until they are thoroughly coated.
- Allow the onions to marinate for 15 minutes to prevent them from drying out during grilling.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Place the onion rounds directly on the grill. Cook for 3–4 minutes per side until a deep mahogany-colored char appears and the center is slightly softened.
