Ingredients:

  • 2 large red onions (approx. 1 lb / 450g)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder

Instructions:

  1. Peel the outer papery skin from the onions. Slice the onions into thick rounds, approximately 3/4 inch (2cm) thick. Gently press down on the rounds to separate the layers slightly without completely breaking them apart.
  2. In a large bowl, whisk together the olive oil, balsamic vinegar, salt, pepper, and garlic powder. Toss the onion rounds in the mixture until they are thoroughly coated.
  3. Allow the onions to marinate for 15 minutes to prevent them from drying out during grilling.
  4. Preheat the grill to medium-high heat and lightly oil the grates.
  5. Place the onion rounds directly on the grill. Cook for 3–4 minutes per side until a deep mahogany-colored char appears and the center is slightly softened.
