Ingredients:

  • 2 lbs beef
  • 1/2 cup balsamic vinegar
  • 2 tbsp fresh lemon juice
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp honey
  • 1/2 tsp black pepper

Instructions:

  1. In a medium mixing bowl, combine the minced garlic, dried oregano, and black pepper to hydrate the herbs.
  2. Whisk in the honey and soy sauce until dissolved. Slowly stream in the olive oil while whisking vigorously to create an emulsion, then stir in the balsamic vinegar and lemon juice.
  3. Pour the marinade into a zip-top bag. Add cubed beef, seal tightly, and massage for 30 seconds to ensure full coverage. Expel air and marinate for 30 minutes to 8 hours.
  4. Thread beef onto skewers and grill over medium-high heat for approximately 10 minutes or until desired doneness is reached.
