Ingredients:

  • 1/2 cup extra virgin olive oil
  • 3 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 3 cloves garlic, minced fine
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp fresh thyme leaves
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. Combine the olive oil, balsamic vinegar, and lemon juice in a mixing bowl and whisk vigorously for 30 seconds until the liquids are unified.
  2. Stir in the minced garlic, dried oregano, dried basil, and fresh thyme.
  3. Add the salt, black pepper, and red pepper flakes, then whisk one final time to hydrate the dried herbs.
  4. Place chopped vegetables into a zip-top bag, pour the marinade over them, and squeeze out all excess air before sealing.
  5. Massage the bag for 60 seconds to force the marinade into the vegetables and let sit for 30 minutes at room temperature.
