Ingredients:
- 1/2 cup extra virgin olive oil
- 3 tbsp balsamic vinegar
- 1 tbsp lemon juice
- 3 cloves garlic, minced fine
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp fresh thyme leaves
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Combine the olive oil, balsamic vinegar, and lemon juice in a mixing bowl and whisk vigorously for 30 seconds until the liquids are unified.
- Stir in the minced garlic, dried oregano, dried basil, and fresh thyme.
- Add the salt, black pepper, and red pepper flakes, then whisk one final time to hydrate the dried herbs.
- Place chopped vegetables into a zip-top bag, pour the marinade over them, and squeeze out all excess air before sealing.
- Massage the bag for 60 seconds to force the marinade into the vegetables and let sit for 30 minutes at room temperature.
