Ingredients:

  • 1.5 lb top sirloin steak, cut into 1-inch cubes
  • 1 lb baby gold potatoes, halved or quartered into 1/2-inch pieces
  • 2 tbsp avocado oil
  • 1.5 tsp coarse kosher salt
  • 1 tsp cracked black pepper
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 0.5 tsp smoked paprika

Instructions:

  1. Preheat your Blackstone griddle to high heat, aiming for a surface temperature of 200°C.
  2. Pat the steak cubes completely dry with paper towels to ensure a proper sear. Toss the potato pieces and steak cubes in avocado oil, salt, pepper, and smoked paprika.
  3. Place potatoes on a medium-heat zone of the griddle. Cook for 6-8 minutes until golden and tender, turning occasionally.
  4. Move potatoes to the side and place steak cubes on the high-heat zone in a single layer. Let sear undisturbed for 2 minutes to develop a crust.
  5. Toss the steak and potatoes together using metal spatulas. Turn off the heat, then add the butter, minced garlic, parsley, and smoked paprika. Toss everything together for 30 seconds until the butter is foamy and fragrant.
