Ingredients:

  • 8 slices Thick-cut Applewood Smoked Bacon (approx. 225g)
  • 6 Smoked Salmon slices (Lox style, approx. 115g)
  • 4 Hard-boiled eggs, halved
  • 12 Mini Pancakes or Silver Dollar Waffles
  • 6 Mini Croissants
  • 1 cup Mini Bagels or toasted Bagel Chips
  • 1/2 cup full fat Greek Yogurt
  • 4 oz Cream Cheese (115g)
  • 1/2 cup Maple Syrup
  • 4 oz Brie or sharp White Cheddar wedges (115g)
  • 1 cup Fresh Strawberries and Blueberries
  • 1 cup Sliced Cucumber and Radishes
  • 1 tbsp Capers
  • Fresh Dill and Mint sprigs for garnish

Instructions:

  1. Place empty ramekins on the board in a triangle pattern to serve as anchors. Fill them with Greek yogurt, maple syrup, and cream cheese.
  2. Cook the thick-cut bacon in a cast iron skillet over medium heat until crispy. Drain on paper towels to remove excess grease before placing on the board.
  3. Arrange the mini pancakes, mini croissants, and mini bagels around the anchor ramekins, creating a 'flow' of carbohydrates.
  4. Position the savory proteins: place the cooked bacon, smoked salmon slices, and halved hard-boiled eggs in the remaining large open spaces.
  5. Nestle the brie or cheddar wedges and fresh sliced cucumbers and radishes near the salmon and bagels.
  6. Fill any small gaps with fresh strawberries, blueberries, and capers. Garnish with sprigs of fresh dill and mint for aromatic balance.
