- 1 large English cucumber (seedless preferred), about 10-12 inches long
- 16 slices high-quality white bread, soft texture, crusts removed
Instructions:
- Ensure cream cheese is properly softened. In a medium bowl, combine the softened cream cheese and mayonnaise. Beat with a rubber spatula or spoon until the mixture is smooth and lump-free. Stir in the finely chopped fresh dill, fresh chives, garlic powder, onion powder, and the optional pinch of cayenne pepper. Season with salt and freshly ground black pepper to taste, mixing until all ingredients are well combined. Cover the bowl and refrigerate the spread for at least 30 minutes to allow the flavors to meld and the mixture to firm slightly, which helps prevent sogginess during assembly.
- Wash the English cucumber thoroughly. Using a sharp chef's knife or mandoline slicer, slice the cucumber into very thin rounds, approximately 1/16 inch thick. Lay the cucumber slices in a single layer on a clean kitchen towel or several layers of paper towels. Sprinkle lightly with salt (this is optional but highly recommended to help draw out excess moisture). Gently place another towel on top and press down to absorb moisture. Let sit for 10-15 minutes, then pat the cucumber slices thoroughly dry again. This critical step ensures crisp sandwiches and prevents them from becoming watery.
- Carefully remove the crusts from the 16 slices of high-quality white bread. If desired, for a more compact and elegant sandwich, you may gently flatten each slice of bread with a rolling pin, though this step is optional.
- Take one slice of the prepared bread and generously spread a layer of the chilled cream cheese mixture over it, extending almost to the edges. Arrange a single layer of the thoroughly dried cucumber slices neatly on top of the cream cheese mixture, slightly overlapping them if necessary. Top with another slice of bread, pressing down gently but firmly to secure the filling and ensure the sandwich holds together.
- Using a very sharp knife, cut each assembled sandwich into four mini squares or triangles. For a decorative touch suitable for a baby shower, you can use small cookie cutters (such as a circle, star, or flower shape) to create elegant individual bites.
