Ingredients:
- 1.5 lbs chicken breast, cut into 1.5-inch cubes
- 1/2 cup thick Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp ginger-garlic paste
- 1 tsp Kashmiri red chili powder
- 1 tsp garam masala
- 1/2 tsp turmeric powder
- 1/2 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp unsalted butter, melted
- 1 tsp lemon juice
- Fresh cilantro, chopped
Instructions:
- In a large bowl, whisk together the Greek yogurt, 1 tablespoon lemon juice, ginger-garlic paste, and all dry spices (chili powder, garam masala, turmeric, cumin, salt, and black pepper) until it forms a smooth, vibrant orange paste.
- Add the chicken cubes to the bowl and toss until every piece is fully submerged in the marinade.
- Allow the chicken to marinate for 30 minutes to allow the acids to tenderize the meat.
- Slide the marinated chicken pieces onto skewers, leaving small gaps between each piece for even heat distribution.
- Preheat a grill or cast-iron griddle pan to medium-high heat.
- Place skewers on the heat and grill for 4–5 minutes per side until edges are mahogany brown with blackened charred spots.
- Brush the grilled skewers with melted butter and drizzle with the remaining teaspoon of lemon juice. Garnish with chopped fresh cilantro.
