Ingredients:

  • 1.5 lbs chicken breast, cut into 1.5-inch cubes
  • 1/2 cup thick Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp ginger-garlic paste
  • 1 tsp Kashmiri red chili powder
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp unsalted butter, melted
  • 1 tsp lemon juice
  • Fresh cilantro, chopped

Instructions:

  1. In a large bowl, whisk together the Greek yogurt, 1 tablespoon lemon juice, ginger-garlic paste, and all dry spices (chili powder, garam masala, turmeric, cumin, salt, and black pepper) until it forms a smooth, vibrant orange paste.
  2. Add the chicken cubes to the bowl and toss until every piece is fully submerged in the marinade.
  3. Allow the chicken to marinate for 30 minutes to allow the acids to tenderize the meat.
  4. Slide the marinated chicken pieces onto skewers, leaving small gaps between each piece for even heat distribution.
  5. Preheat a grill or cast-iron griddle pan to medium-high heat.
  6. Place skewers on the heat and grill for 4–5 minutes per side until edges are mahogany brown with blackened charred spots.
  7. Brush the grilled skewers with melted butter and drizzle with the remaining teaspoon of lemon juice. Garnish with chopped fresh cilantro.
