  • 1 bunch (500g) green grapes
  • 2 medium (182g edible portion) oranges or grapefruit, segmented
  • 2 medium (120g edible portion) kiwis, peeled and sliced
  • 1 cup (329g) pure maple syrup
  • ½ cup (168g) honey
  • 1 cup (240g) Greek yogurt or whipped cream
  • ½ cup (120g) assorted jams or fruit preserves
  • ¼ cup (40g) chocolate chips or mini chocolate curls
  • ¼ cup (25g) chopped nuts (pecans, walnuts)
  • Powdered sugar, for dusting
  • 8 hard-boiled eggs, halved (optional)
  • 200g small breakfast sausage links (pre-cooked, optional)

Instructions:

  1. For the Mini Waffles: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. In a separate bowl, whisk together the egg yolks, whole milk, melted butter (cooled slightly), and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until just combined to avoid tough waffles. In a third clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the waffle batter until no streaks remain, being careful not to deflate them.
  2. Cook the Waffles: Heat your mini waffle maker (or standard waffle iron). Lightly grease if necessary. Pour the batter according to your waffle maker's instructions and cook until golden brown and crisp. Transfer cooked waffles to a wire rack to cool slightly, or keep warm in a low oven set to 170°F (77°C) on a wire rack set over a baking sheet to prevent sogginess.
  3. Prepare the Fresh Fruit: Wash all berries thoroughly. Peel, seed, and cut the cantaloupe into wedges or balls. Wash the green grapes. Segment the oranges or grapefruit. Peel and slice the kiwis. Arrange all prepared fruit beautifully on a large serving board or platter.
  4. Arrange Decadent Toppings & Spreads: Pour the pure maple syrup and honey into small bowls or ramekins. Spoon Greek yogurt (or whipped cream) and assorted jams/preserves into separate small bowls. Place chocolate chips or curls and chopped nuts into their own small dishes.
