Ingredients:

  • 1.5 lbs Large Shrimp (16/20 count), peeled and deveined
  • 2 tbsp Avocado oil
  • 1 tsp Kosher salt
  • 1/2 tsp Cracked black pepper
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/4 tsp Cayenne pepper
  • 3 tbsp Unsalted butter, cubed and cold
  • 3 cloves Garlic, minced
  • 0.5 Fresh lemon, juiced
  • 2 tbsp Fresh parsley, finely chopped

Instructions:

  1. Pat the shrimp bone-dry with paper towels to ensure a proper sear. In a large bowl, toss the shrimp with avocado oil, kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper until evenly coated.
  2. Preheat your Blackstone griddle to medium-high heat, aiming for a surface temperature of 400°F (204°C).
  3. Spread the shrimp out in a single layer on the griddle surface, ensuring they are not touching. Sear undisturbed for 2 minutes until the bottoms are pink and have developed a slight golden crust.
  4. Flip the shrimp using a metal spatula. Move them into a tight pile and add the cold cubed butter and minced garlic directly onto the shrimp.
  5. Toss the shrimp continuously in the melting butter and garlic for 60-90 seconds until the garlic is fragrant and the shrimp are fully opaque.
  6. Drizzle with fresh lemon juice and garnish with chopped parsley before serving immediately.
