Ingredients:
- 1 lb (450g) Top Sirloin steak, cut into 1-inch cubes
- 1 tsp (6g) Kosher salt
- ½ tsp (1g) Black pepper
- 2 tbsp (30ml) Grapeseed oil
- 4 tbsp (56g) Unsalted butter
- 4 cloves (12g) Garlic, minced
- 1 tbsp (4g) Fresh parsley, finely chopped
- ½ tsp (2g) Dried thyme
Instructions:
- Pat the steak cubes completely dry with paper towels and season generously with salt and pepper.
- Heat the oil in a cast iron skillet over medium-high heat until it just begins to shimmer.
- Add steak bites in a single layer. Sear for 2-3 minutes without moving to create a crust, then toss for another 2 minutes until the desired internal temperature is reached.
- Reduce the heat to medium-low.
- Immediately add the butter, minced garlic, and herbs. Toss the steak tips continuously for 60 seconds to baste the meat in the garlic butter glaze.
