Ingredients:

  • 2 lbs boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 4 tbsp unsalted butter
  • 6 cloves minced garlic
  • 1 tsp dried oregano
  • ¼ tsp red pepper flakes

Instructions:

  1. Pat the chicken thighs completely dry with paper towels. In a small bowl, combine salt, pepper, and paprika, then rub the mixture evenly over both sides of the meat.
  2. Heat olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear thighs for 5–7 minutes per side without moving them until a deep, golden-brown crust develops.
  3. Reduce heat to medium. Add butter, minced garlic, oregano, and red pepper flakes. Baste the chicken by continuously pouring the foaming garlic butter over the meat for 2 minutes.
  4. Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 10–15 minutes, or until the internal temperature reaches 175°F (80°C).
  5. Move chicken to a plate, pour the remaining pan butter over the top, and let rest for 5 minutes before serving.
