Ingredients:
- 2 lbs boneless skinless chicken thighs
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 4 tbsp unsalted butter
- 6 cloves minced garlic
- 1 tsp dried oregano
- ¼ tsp red pepper flakes
Instructions:
- Pat the chicken thighs completely dry with paper towels. In a small bowl, combine salt, pepper, and paprika, then rub the mixture evenly over both sides of the meat.
- Heat olive oil in an oven-safe skillet over medium-high heat until shimmering. Sear thighs for 5–7 minutes per side without moving them until a deep, golden-brown crust develops.
- Reduce heat to medium. Add butter, minced garlic, oregano, and red pepper flakes. Baste the chicken by continuously pouring the foaming garlic butter over the meat for 2 minutes.
- Transfer the skillet to a preheated oven at 400°F (200°C) and bake for 10–15 minutes, or until the internal temperature reaches 175°F (80°C).
- Move chicken to a plate, pour the remaining pan butter over the top, and let rest for 5 minutes before serving.
