Ingredients:

  • 1/4 cup extra virgin olive oil
  • 3 tbsp Dijon mustard
  • 4 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1.5 lb beef sirloin, cut into 1-inch cubes
  • 1 large red onion, cut into 1-inch chunks
  • 1 large red bell pepper, cut into 1-inch chunks

Instructions:

  1. In a large mixing bowl, whisk together the olive oil, Dijon mustard, minced garlic, Worcestershire sauce, paprika, salt, and pepper until emulsified.
  2. Toss the beef cubes in the garlic rub until evenly coated and let marinate at room temperature for 30 minutes.
  3. Thread the marinated beef onto skewers, alternating with red onion and red bell pepper chunks, leaving slight gaps between items for heat circulation.
  4. Preheat grill to medium-high heat and grill skewers for 3–4 minutes per side until a mahogany char forms.
  5. Remove beef from heat when the internal temperature reaches 130°F (54°C) for medium-rare and allow to rest.
