Ingredients:
- 1/4 cup extra virgin olive oil
- 3 tbsp Dijon mustard
- 4 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1.5 lb beef sirloin, cut into 1-inch cubes
- 1 large red onion, cut into 1-inch chunks
- 1 large red bell pepper, cut into 1-inch chunks
Instructions:
- In a large mixing bowl, whisk together the olive oil, Dijon mustard, minced garlic, Worcestershire sauce, paprika, salt, and pepper until emulsified.
- Toss the beef cubes in the garlic rub until evenly coated and let marinate at room temperature for 30 minutes.
- Thread the marinated beef onto skewers, alternating with red onion and red bell pepper chunks, leaving slight gaps between items for heat circulation.
- Preheat grill to medium-high heat and grill skewers for 3–4 minutes per side until a mahogany char forms.
- Remove beef from heat when the internal temperature reaches 130°F (54°C) for medium-rare and allow to rest.
