Ingredients:
- 2 lbs boneless skinless chicken breasts or thighs, cut into 1-inch cubes
- 1/2 cup plain Greek yogurt
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp lemon zest
- 4 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 1 cup plain Greek yogurt
- 1 cup English cucumber, grated and squeezed dry
- 1 clove garlic, minced
- 1 tbsp fresh lemon juice
- 2 tbsp fresh dill, finely chopped
- 1/4 tsp salt
Instructions:
- Whisk the Greek yogurt, olive oil, lemon juice, zest, minced garlic, oregano, salt, and pepper in a large bowl. Mix until it forms a thick, smooth paste.
- Toss the cubed chicken into the bowl. Stir until every piece is heavily coated.

- Thread the marinated chicken onto skewers. Leave a tiny gap between each piece. Note: This prevents the meat from steaming.
- Heat your grill to medium high.
- Grill the skewers for approximately 12 minutes. Flip them occasionally until the internal temperature reaches 165°F (74°C) and the edges are browned.
- Grate the English cucumber and wrap it in a towel. Squeeze firmly to remove all excess liquid.
- Stir the squeezed cucumber, yogurt, minced garlic, lemon juice, dill, and salt in a small bowl until the mixture is smooth and creamy.
- Let the chicken rest for 5 minutes before serving with a dollop of Tzatziki.
