Ingredients:

  • 2 lbs boneless skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/2 cup plain Greek yogurt
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 4 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1 cup plain Greek yogurt
  • 1 cup English cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh dill, finely chopped
  • 1/4 tsp salt

Instructions:

  1. Whisk the Greek yogurt, olive oil, lemon juice, zest, minced garlic, oregano, salt, and pepper in a large bowl. Mix until it forms a thick, smooth paste.
  2. Toss the cubed chicken into the bowl. Stir until every piece is heavily coated.

  4. Thread the marinated chicken onto skewers. Leave a tiny gap between each piece. Note: This prevents the meat from steaming.
  5. Heat your grill to medium high.
  6. Grill the skewers for approximately 12 minutes. Flip them occasionally until the internal temperature reaches 165°F (74°C) and the edges are browned.
  7. Grate the English cucumber and wrap it in a towel. Squeeze firmly to remove all excess liquid.
  8. Stir the squeezed cucumber, yogurt, minced garlic, lemon juice, dill, and salt in a small bowl until the mixture is smooth and creamy.
  9. Let the chicken rest for 5 minutes before serving with a dollop of Tzatziki.
