  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 2 medium red bell peppers, cut into 1-inch chunks
  • 1 large red onion, cut into 1-inch chunks
  • 1 medium zucchini, sliced into thick rounds

Instructions:

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
  2. Add the cubed chicken breast to the bowl and stir until every piece is evenly coated and glossy.
  3. Allow the chicken to marinate at room temperature for 30 minutes to accelerate flavor absorption.
  4. Thread the marinated chicken, red bell pepper chunks, red onion chunks, and zucchini rounds onto skewers, alternating ingredients.
  5. Place skewers on a preheated high-heat grill and sear until the chicken reaches an internal temperature of 165°F (74°C).
