- 2 medium red bell peppers, cut into 1-inch chunks
- 1 large red onion, cut into 1-inch chunks
- 1 medium zucchini, sliced into thick rounds
Instructions:
- In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, pepper, and paprika.
- Add the cubed chicken breast to the bowl and stir until every piece is evenly coated and glossy.
- Allow the chicken to marinate at room temperature for 30 minutes to accelerate flavor absorption.
- Thread the marinated chicken, red bell pepper chunks, red onion chunks, and zucchini rounds onto skewers, alternating ingredients.
- Place skewers on a preheated high-heat grill and sear until the chicken reaches an internal temperature of 165°F (74°C).
