Ingredients:

  • 1 large fresh pineapple (firm-ripe)
  • 2 tbsp neutral oil
  • 100g dark brown sugar
  • 60g unsalted butter, melted
  • 1 tsp ground cinnamon
  • 0.5 tsp smoked paprika
  • 1 tbsp fresh lime juice
  • 0.25 tsp flaky sea salt

Instructions:

  1. Slice the top and bottom off the pineapple.
  2. Stand it upright and shave off the skin, following the curve of the fruit.
  3. Cut into 1 inch thick rounds or long wedges. Note: Wedges are easier to flip.
  4. Pat the pineapple surfaces completely dry with paper towels.
  5. Whisk the 100g dark brown sugar, 60g melted butter, cinnamon, paprika, lime juice, and salt.
  6. Preheat your grill to medium high (around 400°F/200°C).
  7. Lightly coat the pineapple pieces with 2 tbsp neutral oil. Note: This prevents sticking.
  8. Place pineapple on the grates and sear for 4 minutes until deep brown grill marks appear.
  9. Flip the pieces using sturdy tongs.
  10. Brush the seared side generously with the brown sugar glaze.
  11. Grill for another 3 to 4 minutes until the glaze is bubbling and tacky.
  12. Remove from heat and let rest for 2 minutes before serving.
