Ingredients:
- 1 large fresh pineapple (firm-ripe)
- 2 tbsp neutral oil
- 100g dark brown sugar
- 60g unsalted butter, melted
- 1 tsp ground cinnamon
- 0.5 tsp smoked paprika
- 1 tbsp fresh lime juice
- 0.25 tsp flaky sea salt
Instructions:
- Slice the top and bottom off the pineapple.
- Stand it upright and shave off the skin, following the curve of the fruit.
- Cut into 1 inch thick rounds or long wedges. Note: Wedges are easier to flip.
- Pat the pineapple surfaces completely dry with paper towels.
- Whisk the 100g dark brown sugar, 60g melted butter, cinnamon, paprika, lime juice, and salt.
- Preheat your grill to medium high (around 400°F/200°C).
- Lightly coat the pineapple pieces with 2 tbsp neutral oil. Note: This prevents sticking.
- Place pineapple on the grates and sear for 4 minutes until deep brown grill marks appear.
- Flip the pieces using sturdy tongs.
- Brush the seared side generously with the brown sugar glaze.
- Grill for another 3 to 4 minutes until the glaze is bubbling and tacky.
- Remove from heat and let rest for 2 minutes before serving.
