Ingredients:

  • 1.5 lb Ahi Tuna loin, cut into 1.5-inch cubes
  • 1 large red onion, cut into 1.5-inch chunks
  • 1 large red bell pepper, cut into 1.5-inch chunks
  • 1 medium zucchini, sliced into thick rounds
  • 2 tbsp neutral oil
  • 1/4 cup extra virgin olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Whisk all marinade ingredients (olive oil, soy sauce, honey, lime juice, garlic, ginger, smoked paprika, salt, and black pepper) in a bowl until the honey is fully incorporated.
  2. Pat the tuna cubes dry with a paper towel. Toss the tuna in half of the marinade and refrigerate for 30 minutes.
  3. Use the remaining marinade to coat the red onion, red bell pepper, and zucchini.
  4. Thread the tuna and vegetables onto skewers, alternating between fish, onion, pepper, and zucchini, leaving small gaps between each piece.
  5. Preheat the grill to high (450°F - 500°F) and lightly oil the grates.
  6. Sear the skewers for 2–3 minutes per side. Remove from the grill when the internal temperature reaches 115°F for medium-rare.
