Ingredients:
- 1.5 lb Ahi Tuna loin, cut into 1.5-inch cubes
- 1 large red onion, cut into 1.5-inch chunks
- 1 large red bell pepper, cut into 1.5-inch chunks
- 1 medium zucchini, sliced into thick rounds
- 2 tbsp neutral oil
- 1/4 cup extra virgin olive oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Whisk all marinade ingredients (olive oil, soy sauce, honey, lime juice, garlic, ginger, smoked paprika, salt, and black pepper) in a bowl until the honey is fully incorporated.
- Pat the tuna cubes dry with a paper towel. Toss the tuna in half of the marinade and refrigerate for 30 minutes.
- Use the remaining marinade to coat the red onion, red bell pepper, and zucchini.
- Thread the tuna and vegetables onto skewers, alternating between fish, onion, pepper, and zucchini, leaving small gaps between each piece.
- Preheat the grill to high (450°F - 500°F) and lightly oil the grates.
- Sear the skewers for 2–3 minutes per side. Remove from the grill when the internal temperature reaches 115°F for medium-rare.
