Ingredients:
- 1 box (15.25 oz) White Cake Mix
- 2 large Eggs, room temperature
- 1/2 cup Neutral Vegetable Oil
- 1 tsp Pure Vanilla Extract
- 1/4 tsp Peppermint Extract
- 3 drops Neon Green Gel Food Coloring
- 1/2 cup Granulated White Sugar
- 1/2 cup Confectioners' Powdered Sugar
- 24 Large Red Heart Sprinkles
Instructions:
- In a large mixing bowl, combine the white cake mix, eggs, vegetable oil, vanilla extract, and peppermint extract. Using an electric mixer or stiff spatula, mix until a thick dough forms.
- Add neon green gel food coloring one drop at a time, mixing thoroughly between additions until the dough reaches a saturated, electric-green pigment.
- Using a medium cookie scoop (approx. 1.5 tablespoons), portion the dough into 24 even balls.
- Roll each dough ball first in the granulated sugar to create a moisture barrier, then immediately roll in the powdered sugar until heavily and evenly coated.
- Place the balls on a parchment-lined baking sheet and bake at 350°F (175°C) for 10 minutes until the edges are set and the tops have crinkled, but the cookies remain soft.
- Remove from oven and immediately press one large red heart sprinkle into the side of each warm cookie, allowing the residual heat to adhere the sprinkle without melting it.
