Ingredients:

  • 1 box (15.25 oz) White Cake Mix
  • 2 large Eggs, room temperature
  • 1/2 cup Neutral Vegetable Oil
  • 1 tsp Pure Vanilla Extract
  • 1/4 tsp Peppermint Extract
  • 3 drops Neon Green Gel Food Coloring
  • 1/2 cup Granulated White Sugar
  • 1/2 cup Confectioners' Powdered Sugar
  • 24 Large Red Heart Sprinkles

Instructions:

  1. In a large mixing bowl, combine the white cake mix, eggs, vegetable oil, vanilla extract, and peppermint extract. Using an electric mixer or stiff spatula, mix until a thick dough forms.
  2. Add neon green gel food coloring one drop at a time, mixing thoroughly between additions until the dough reaches a saturated, electric-green pigment.
  3. Using a medium cookie scoop (approx. 1.5 tablespoons), portion the dough into 24 even balls.
  4. Roll each dough ball first in the granulated sugar to create a moisture barrier, then immediately roll in the powdered sugar until heavily and evenly coated.
  5. Place the balls on a parchment-lined baking sheet and bake at 350°F (175°C) for 10 minutes until the edges are set and the tops have crinkled, but the cookies remain soft.
  6. Remove from oven and immediately press one large red heart sprinkle into the side of each warm cookie, allowing the residual heat to adhere the sprinkle without melting it.
