Ingredients:
- 2 lbs ground beef (80/20 blend)
- 1 tsp kosher salt
- ½ tsp freshly cracked black pepper
- 1 tbsp neutral oil
- 6 burger buns
- 6 slices sharp cheddar or American cheese
- 2 tbsp unsalted butter, softened
Instructions:
- Divide the ground beef into 6 equal portions and lightly shape them into discs about ¾ inch (2cm) thick without overworking the meat.
- Use your thumb to press a shallow indentation (dimple) into the center of each patty to prevent doming during cooking.
- Season both sides of the patties generously with kosher salt and freshly cracked black pepper immediately before cooking.
- Heat a cast iron skillet or heavy-bottomed pan over medium-high heat until screaming hot.
- Carefully place patties in the pan and sear for approximately 4 minutes per side to develop a deep brown crust.
- Place a slice of cheese on each patty during the final minute of cooking until melted.
- Spread softened butter on the burger buns and toast them in the skillet until golden brown.
- Assemble the burgers on the toasted buns with optional toppings like lettuce, tomato, and onion.
