Ingredients:

  • 2 lbs ground beef (80/20 blend)
  • 1 tsp kosher salt
  • ½ tsp freshly cracked black pepper
  • 1 tbsp neutral oil
  • 6 burger buns
  • 6 slices sharp cheddar or American cheese
  • 2 tbsp unsalted butter, softened

Instructions:

  1. Divide the ground beef into 6 equal portions and lightly shape them into discs about ¾ inch (2cm) thick without overworking the meat.
  2. Use your thumb to press a shallow indentation (dimple) into the center of each patty to prevent doming during cooking.
  3. Season both sides of the patties generously with kosher salt and freshly cracked black pepper immediately before cooking.
  4. Heat a cast iron skillet or heavy-bottomed pan over medium-high heat until screaming hot.
  5. Carefully place patties in the pan and sear for approximately 4 minutes per side to develop a deep brown crust.
  6. Place a slice of cheese on each patty during the final minute of cooking until melted.
  7. Spread softened butter on the burger buns and toast them in the skillet until golden brown.
  8. Assemble the burgers on the toasted buns with optional toppings like lettuce, tomato, and onion.
