Ingredients:
- 1/2 cup olive oil
- 1/4 cup fresh lime juice
- 2 tbsp chipotle peppers in adobo, minced
- 1 tbsp honey
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 cup fresh cilantro, finely chopped
- 2 lbs chicken breast, pounded to even thickness
Instructions:
- Whisk together the olive oil, lime juice, minced chipotle, honey, garlic, and spices in a bowl until emulsified.
- Place the chicken in a Ziploc bag and pour the marinade over the meat, massaging it in to ensure every inch is coated.
- Seal the bag and refrigerate for a minimum of 2 hours (or up to 24 hours for maximum flavor).
- Preheat grill to medium-high (approximately 400°F/200°C) and lightly oil the grates.
- Place chicken on the grill, avoiding overcrowding, and sear 6-8 mins per side until a dark brown char forms and the internal temperature reaches 165°F/74°C.
- Remove chicken from the heat and let it rest on a platter for 5 minutes.
