Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp chipotle peppers in adobo, minced
  • 1 tbsp honey
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh cilantro, finely chopped
  • 2 lbs chicken breast, pounded to even thickness

Instructions:

  1. Whisk together the olive oil, lime juice, minced chipotle, honey, garlic, and spices in a bowl until emulsified.
  2. Place the chicken in a Ziploc bag and pour the marinade over the meat, massaging it in to ensure every inch is coated.
  3. Seal the bag and refrigerate for a minimum of 2 hours (or up to 24 hours for maximum flavor).
  4. Preheat grill to medium-high (approximately 400°F/200°C) and lightly oil the grates.
  5. Place chicken on the grill, avoiding overcrowding, and sear 6-8 mins per side until a dark brown char forms and the internal temperature reaches 165°F/74°C.
  6. Remove chicken from the heat and let it rest on a platter for 5 minutes.
