Ingredients:
- 1.5 lb ground beef (80/20 lean-to-fat ratio)
- 1/2 cup yellow onion, grated and squeezed dry
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp ground cinnamon
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/4 tsp cayenne pepper
Instructions:
- Combine the ground beef, grated onion, minced garlic, and chopped parsley in a large bowl.
- Sprinkle the ground cumin, coriander, smoked paprika, cinnamon, kosher salt, black pepper, and cayenne pepper evenly over the meat.
- Using your hands, mix the ingredients until just combined; do not overwork the meat to avoid a rubbery texture.
- Divide the mixture into 6 equal portions and mold each portion around a skewer, pressing firmly to shape them into uniform cylinders roughly 1 inch thick.
- Heat a grill or skillet over medium-high heat. Place skewers on the heat and sear for 3–4 minutes per side until a deep mahogany crust forms and internal temperature reaches 160°F (71°C).
- Remove skewers from heat and transfer to a platter to rest for 5 minutes before serving.
