Ingredients:

  • 1.5 lb ground beef (80/20 lean-to-fat ratio)
  • 1/2 cup yellow onion, grated and squeezed dry
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp ground cinnamon
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp cayenne pepper

Instructions:

  1. Combine the ground beef, grated onion, minced garlic, and chopped parsley in a large bowl.
  2. Sprinkle the ground cumin, coriander, smoked paprika, cinnamon, kosher salt, black pepper, and cayenne pepper evenly over the meat.
  3. Using your hands, mix the ingredients until just combined; do not overwork the meat to avoid a rubbery texture.
  4. Divide the mixture into 6 equal portions and mold each portion around a skewer, pressing firmly to shape them into uniform cylinders roughly 1 inch thick.
  5. Heat a grill or skillet over medium-high heat. Place skewers on the heat and sear for 3–4 minutes per side until a deep mahogany crust forms and internal temperature reaches 160°F (71°C).
  6. Remove skewers from heat and transfer to a platter to rest for 5 minutes before serving.
