Ingredients:
- 1 lb smoked sausage, sliced into 1/2-inch rounds
- 2 cups carrots, peeled and sliced into 1/4-inch coins
- 2 cups potatoes, diced into 1/2-inch cubes
- 1 large red bell pepper, chopped into 1-inch pieces
- 2 cups brussels sprouts, halved
- 1 medium red onion, cut into wedges
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions:
- Preheat the oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper. For best results, place the pan in the oven while preheating to sear the food immediately.
- In a large mixing bowl, combine the sliced sausage, carrots, potatoes, bell peppers, brussels sprouts, and red onion. Drizzle with olive oil and sprinkle with garlic powder, oregano, salt, and pepper. Toss thoroughly until all ingredients are evenly coated.
- Spread the mixture across the preheated sheet pan in a single layer with space between pieces. Roast for 25–30 minutes until the sausage is browned and the potatoes are fork-tender with charred edges.
