Ingredients:

  • 1 lb sirloin steak, thinly sliced against the grain
  • 3 large bell peppers, sliced into strips
  • 1 large white onion, sliced into half-moons
  • 3 tbsp avocado oil
  • 2 tbsp fresh lime juice
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat the oven to 425°F (220°C) and line a large rimmed baking sheet with parchment paper.
  2. Thinly slice the sirloin steak against the grain to ensure tenderness.
  3. In a large mixing bowl, whisk together the avocado oil, lime juice, chili powder, smoked paprika, garlic powder, ground cumin, salt, and black pepper.
  4. Add the sliced steak, bell peppers, and onion to the bowl and toss thoroughly until all ingredients are evenly coated in the marinade.
  5. Spread the mixture in a single layer across the prepared baking sheet, ensuring ingredients are not crowded to prevent steaming.
  6. Roast for 12–15 minutes, using tongs to flip the steak strips halfway through the cooking time.
  7. Remove from the oven when the peppers have blistered edges and the steak reaches the desired doneness (approximately 135°F for medium-rare).
