  • 1 medium (12 oz) yellow squash, sliced into half-moons
  • 1 large (7 oz) red bell pepper, chopped into 1-inch chunks
  • 1 medium (5 oz) red onion, cut into wedges
  • 1 cup (150g) broccoli florets, bite-sized
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Cut all vegetables into consistent sizes (approximately 1-inch chunks) to ensure uniform cooking.
  2. In a large mixing bowl, combine the chopped vegetables with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss thoroughly until every piece is lightly coated.
  3. Preheat the grill to medium-high (approximately 400°F / 200°C).
  4. Place the seasoned vegetables into the preheated grill basket. Grill for 12–15 minutes, shaking the basket every 4–5 minutes until char marks appear and vegetables are tender-yet-crisp.
