Ingredients:
- 2 cups (250g) zucchini, coarsely grated
- 1 cup (160g) sweet corn, fresh or thawed
- 1/2 tsp (3g) kosher salt
- 1/3 cup (40g) all-purpose flour
- 2 tbsp (16g) cornstarch
- 1 large egg, beaten
- 2 tbsp (30ml) lime juice, freshly squeezed
- 8 tsp (8g) lime zest
- 2 scallions (10g), thinly sliced
- 1/4 tsp (1g) garlic powder
- 1/4 tsp (1g) smoked paprika
- 1/2 tsp (3g) black pepper
- 2 tbsp (30ml) avocado oil
- 1/2 cup (120g) Greek yogurt
- 1 pinch (0.5g) salt
Instructions:
- Place the grated zucchini in a colander and sprinkle with 1/2 tsp salt. Let it sit for 10 minutes to extract moisture.
- Wrap the zucchini in a clean kitchen towel or cheesecloth and squeeze firmly over the sink until no more liquid drips.
- In a large bowl, whisk together the flour, cornstarch, garlic powder, smoked paprika, and pepper.
- Stir the beaten egg, 1 tbsp lime juice, and 1 tbsp lime zest into the flour mixture until a thick paste forms.
- Fold in the squeezed zucchini, corn, and sliced scallions until the vegetables are evenly coated in the batter.
- Heat 2 tbsp of avocado oil in a skillet over medium-high heat until shimmering.
- Scoop approximately 2 tbsp of batter per fritter into the pan, flattening slightly with a spatula, and sear until golden brown on both sides.
- Prepare the lime crema by mixing Greek yogurt, remaining lime juice, remaining lime zest, and a pinch of salt.
