Ingredients:

  • 2 cups (250g) zucchini, coarsely grated
  • 1 cup (160g) sweet corn, fresh or thawed
  • 1/2 tsp (3g) kosher salt
  • 1/3 cup (40g) all-purpose flour
  • 2 tbsp (16g) cornstarch
  • 1 large egg, beaten
  • 2 tbsp (30ml) lime juice, freshly squeezed
  • 8 tsp (8g) lime zest
  • 2 scallions (10g), thinly sliced
  • 1/4 tsp (1g) garlic powder
  • 1/4 tsp (1g) smoked paprika
  • 1/2 tsp (3g) black pepper
  • 2 tbsp (30ml) avocado oil
  • 1/2 cup (120g) Greek yogurt
  • 1 pinch (0.5g) salt

Instructions:

  1. Place the grated zucchini in a colander and sprinkle with 1/2 tsp salt. Let it sit for 10 minutes to extract moisture.
  2. Wrap the zucchini in a clean kitchen towel or cheesecloth and squeeze firmly over the sink until no more liquid drips.
  3. In a large bowl, whisk together the flour, cornstarch, garlic powder, smoked paprika, and pepper.
  4. Stir the beaten egg, 1 tbsp lime juice, and 1 tbsp lime zest into the flour mixture until a thick paste forms.
  5. Fold in the squeezed zucchini, corn, and sliced scallions until the vegetables are evenly coated in the batter.
  6. Heat 2 tbsp of avocado oil in a skillet over medium-high heat until shimmering.
  7. Scoop approximately 2 tbsp of batter per fritter into the pan, flattening slightly with a spatula, and sear until golden brown on both sides.
  8. Prepare the lime crema by mixing Greek yogurt, remaining lime juice, remaining lime zest, and a pinch of salt.
