Ingredients:
- 2 cups (250g) zucchini, coarsely grated
- 1 cup (160g) corn kernels, fresh or frozen
- 2 large (110g) eggs, lightly beaten
- ½ cup (65g) all-purpose flour
- 1 tsp (5g) baking powder
- ½ tsp (3g) garlic powder
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) black pepper
- 2 tbsp (30ml) neutral oil, for frying
- ½ cup (120g) Greek yogurt, plain
- 1 tbsp (15ml) lemon juice, freshly squeezed
- 1 tsp (2g) lemon zest
- 1 clove (5g) garlic, minced or granulated
- 1 tbsp (15ml) extra virgin olive oil
- 1 pinch (1g) salt
Instructions:
- Place the grated zucchini in a clean kitchen towel. Sprinkle with a pinch of salt and let sit for 5 minutes. Twist the towel tightly and squeeze until no more liquid drips out.
- In a large bowl, combine the squeezed zucchini and corn kernels. Stir in the beaten eggs until well coated.
- Fold in the flour, baking powder, garlic powder, salt, and pepper. Mix until just combined.
- Heat 1 tablespoon of oil in a skillet over medium-high heat. Spoon roughly 2 tablespoons of batter per fritter into the pan, flattening them gently with a spatula.
- Cook for 3 minutes per side until a deep mahogany color forms. Transfer immediately to a wire rack.
- In a small bowl, whisk together Greek yogurt, lemon juice, zest, garlic, olive oil, and salt until smooth.
