Ingredients:

  • 2 medium zucchini (approx. 400g), sliced into 1/2-inch rounds
  • 2 medium yellow summer squash (approx. 400g), sliced into 1/2-inch rounds
  • 0.5 small red onion (approx. 50g), sliced into thin wedges
  • 2 tbsp extra virgin olive oil
  • 1 tbsp salted butter, cubed
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes
  • 0.5 tsp kosher salt
  • 0.25 tsp cracked black pepper
  • 0.5 fresh lemon, juiced
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. In a large mixing bowl, toss the sliced zucchini, yellow squash, and red onion wedges with olive oil, minced garlic, oregano, red pepper flakes, salt, and pepper until evenly coated.
  2. Lay out two large sheets of heavy duty foil (about 30cm long each). You can make one giant packet or two smaller ones for quicker cooking.
  3. Pile the vegetable mixture in the center of the foil. Top with the 1 tbsp of cubed butter.
  4. Fold the sides of the foil up and over the vegetables, crimping the edges together tightly. Leave a little bit of headspace for steam but ensure there are no holes.
  5. Preheat your gas grill to medium high heat (around 200°C).
  6. Place packets on a preheated grill over medium-high heat. Grill for 12 minutes until the pouch is puffed up and the vegetables are tender crisp.
  7. Carefully open the packets, squeeze fresh lemon juice over the top, and garnish with fresh parsley before serving.
