Ingredients:
- 2 medium zucchini (approx. 400g), sliced into 1/2-inch rounds
- 2 medium yellow summer squash (approx. 400g), sliced into 1/2-inch rounds
- 0.5 small red onion (approx. 50g), sliced into thin wedges
- 2 tbsp extra virgin olive oil
- 1 tbsp salted butter, cubed
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 0.5 tsp red pepper flakes
- 0.5 tsp kosher salt
- 0.25 tsp cracked black pepper
- 0.5 fresh lemon, juiced
- 2 tbsp fresh parsley, chopped
Instructions:
- In a large mixing bowl, toss the sliced zucchini, yellow squash, and red onion wedges with olive oil, minced garlic, oregano, red pepper flakes, salt, and pepper until evenly coated.
- Lay out two large sheets of heavy duty foil (about 30cm long each). You can make one giant packet or two smaller ones for quicker cooking.
- Pile the vegetable mixture in the center of the foil. Top with the 1 tbsp of cubed butter.
- Fold the sides of the foil up and over the vegetables, crimping the edges together tightly. Leave a little bit of headspace for steam but ensure there are no holes.
- Preheat your gas grill to medium high heat (around 200°C).
- Place packets on a preheated grill over medium-high heat. Grill for 12 minutes until the pouch is puffed up and the vegetables are tender crisp.
- Carefully open the packets, squeeze fresh lemon juice over the top, and garnish with fresh parsley before serving.
