Ingredients:
- 12 oz bell peppers, cut into 1-inch chunks
- 10 oz red onions, cut into 1-inch chunks
- 8 oz zucchini, sliced into thick rounds
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp sea salt
- ¼ tsp cracked black pepper
Instructions:
- In a large mixing bowl, combine the chopped bell peppers, red onions, and zucchini.
- Drizzle the olive oil and lemon juice over the vegetables, then sprinkle in the minced garlic, oregano, salt, and pepper.
- Gently toss the mixture until every piece is coated and let sit for 5 minutes while the grill heats.
- Slide the vegetables onto skewers, alternating pepper, onion, and zucchini, leaving small gaps between each piece to ensure proper charring.
- Preheat the grill or grill pan to medium-high heat and lightly oil the grate to prevent sticking.
- Place skewers on the grill and cook for 3–4 minutes per side until charred edges develop.
