Ingredients:

  • 12 oz bell peppers, cut into 1-inch chunks
  • 10 oz red onions, cut into 1-inch chunks
  • 8 oz zucchini, sliced into thick rounds
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp sea salt
  • ¼ tsp cracked black pepper

Instructions:

  1. In a large mixing bowl, combine the chopped bell peppers, red onions, and zucchini.
  2. Drizzle the olive oil and lemon juice over the vegetables, then sprinkle in the minced garlic, oregano, salt, and pepper.
  3. Gently toss the mixture until every piece is coated and let sit for 5 minutes while the grill heats.
  4. Slide the vegetables onto skewers, alternating pepper, onion, and zucchini, leaving small gaps between each piece to ensure proper charring.
  5. Preheat the grill or grill pan to medium-high heat and lightly oil the grate to prevent sticking.
  6. Place skewers on the grill and cook for 3–4 minutes per side until charred edges develop.
