Ingredients:
- 2 lbs boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/4 tsp cayenne pepper
- 1 tbsp melted butter
- 1 tsp honey
- 1 clove minced garlic
Instructions:
- Pat the chicken thighs completely dry with paper towels to ensure a proper sear.
- In a large bowl, toss the thighs with olive oil until evenly coated, then massage the smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper into the meat.
- Place the seasoned thighs on a parchment-lined baking sheet, leaving at least one inch of space between pieces.
- Preheat the oven to 425°F (218°C) and roast the chicken for 20–25 minutes.
- Combine melted butter, honey, and minced garlic to create a glaze. Brush the glaze over the thighs during the last 2 minutes of cooking.
- Remove from the oven when the internal temperature reaches 165°F (74°C). Transfer to a plate, tent loosely with foil, and let rest for 5–10 minutes.
