Ingredients:

  • 2 lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp cayenne pepper
  • 1 tbsp melted butter
  • 1 tsp honey
  • 1 clove minced garlic

Instructions:

  1. Pat the chicken thighs completely dry with paper towels to ensure a proper sear.
  2. In a large bowl, toss the thighs with olive oil until evenly coated, then massage the smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper into the meat.
  3. Place the seasoned thighs on a parchment-lined baking sheet, leaving at least one inch of space between pieces.
  4. Preheat the oven to 425°F (218°C) and roast the chicken for 20–25 minutes.
  5. Combine melted butter, honey, and minced garlic to create a glaze. Brush the glaze over the thighs during the last 2 minutes of cooking.
  6. Remove from the oven when the internal temperature reaches 165°F (74°C). Transfer to a plate, tent loosely with foil, and let rest for 5–10 minutes.
